These are real meals I’ve thrown together in the past few months using just five Trader Joe’s items. When I say these are easy, I mean easy. Most take 15–20 minutes and only a handful of items—some of which you might already have on hand. They’re fast, affordable, and surprisingly tasty—even for a not-so-enthusiastic cook like me. 1. BBQ Chicken Sandwiches (GF or Regular)
→ Pulled BBQ Chicken + Brioche Buns (or GF buns) + Cabbage Slaw Mix + Mayo + Pickles

📝 Toast the buns. Mix a bit of mayo into the slaw (or leave it plain). Warm the BBQ chicken and pile it high with pickles. Add mustard if you’re feeling fancy.

Chicken thighs + Poblano Salsa + Shredded Cheese + Frozen Corn + Cornbread Crumbles

3. Pesto Chicken & Veggie Plate (Day 1)
→ Pre-marinated Pesto Chicken + Cauliflower/Broccoli Medley + Baked Potatoes + Olive Oil 

📝 Roast the veggies and potatoes with olive oil, salt, and pepper at 400°F for 25–30 min. For optimal flavor, grill or pan-cook the pesto chicken and plate everything together. (Full disclosure: on busy days, I just toss the chicken in the oven with the veggies and roast until chicken hits 165°F. Easy and it works!) Simple, satisfying, and flexible to fit your pace of life.

→ Use leftover chicken in TJs Lavash Bread + Hummus + Arugula + Tomatoes + Cucumber Slices 

📝 Spread hummus on Lavash, layer with sliced chicken, arugula, and chopped veggies. Roll it up and slice in half — easy lunch or dinner.

5. Chicken Shawarma Bowls
→ Shawarma Chicken Thighs + Tabbouleh + Hummus + Cucumber + Garlic Sauce or Yogurt 

📝 Cook Shawarma Chicken and slice. Serve over a scoop of tabbouleh with dollops of hummus and sliced cucumber. Add garlic sauce or plain yogurt for a creamy finish.

6. Savory Grain Bowl
→ Brown Rice/Quinoa Blend + Fried Egg + Avocado + Spinach + Soy Sauce or Coconut Aminos 
📝 Warm the rice according to package instructions (full transparency: I usually zap it in the microwave—quick and easy, not gourmet, but done!). Sauté the spinach lightly or, on busy days, toss it in the microwave too (I won’t tell!). Top with a fried egg, sliced avocado, and a drizzle of soy sauce. Simple, tasty, and totally doable.

→ Pasta Sauce + Ground Beef + Pasta + Garlic and Cheese Breadsticks + Bag of Salad
📝 Preheat the oven to bake the breadsticks while you cook the pasta and brown the beef. Once the beef is mixed with the sauce, pop the breadsticks in the oven to bake. Toss the salad, and everything will be ready to serve together. Dinner that feels homemade, but you barely lifted a finger.

8. Soyaki Turkey Stir Fry (Gluten-Free Option Available)
→ Savory Ground Turkey + Crisp Cabbage & Carrot Mix + Rich Soyaki Sauce + Fluffy Basmati Rice = a quick, flavor-packed dinner. 
📝 Brown the turkey, afterwards add veggie mix, and stir in Soyaki to taste. Serve over warm rice. Swap for cauliflower rice if you want a lighter version.

9. Chicken Garlic Sausage (Gluten-Free)
→ TJs Chicken Garlic Sausage + Broccoli & Cauliflower Duet + Chopped Red and Yellow peppers + polenta (optional) = an EZ, veggie-packed dinner. 
📝 Assemble sausage and veggies on a sheet pan and cook until browned and cooked through (165 degrees for sausage). Veggies should be tender-crisp. 
You could also sauté chopped sausage, followed by the broccoli, cauliflower, and peppers until tender-crisp. 
If using, prepare polenta according to package directions. Serve the sausage and veggies over or alongside the polenta for a hearty, colorful meal.
