My 10 Go-To Trader Joe’s Dinners (Mostly Gluten Free & Very Low Effort)

Dinner is relentless.

Every single night, it shows up again asking the same annoying question:
“So… what’s the plan here?”

And while I love the idea of cooking elaborate meals, most weeknights I’m just trying to get something reasonably healthy on the table before everyone starts snacking or the hanger levels become dangerous. 

Lately, I’ve also noticed I feel a lot better when I don’t overdo it on gluten.

Not in an extreme, never-touch-bread-again kind of way. But in a very real:
“I need to avoid the ‘gluten hangover’ tomorrow morning” kind of way.

The problem is, many gluten-free meal ideas feel either overly complicated, expensive, or over the top wellness-y for me. And elaborate meals can’t be my top priority right now. 

I still want meals that are tasty, but I need them to be affordable and simple enough. Which is exactly why Trader Joe’s has become one of my favorite weeknight shortcuts.

These aren’t gourmet recipes or strict gluten-free meal plans. They’re the real-life dinners I put on the table when life is hectic, the fridge looks meh, and I need something easy that still feels good afterward.

A few shortcuts. A couple good sauces. Maybe one vegetable I didn’t forget about.

These are my 10 go-to Trader Joe’s dinners lately. None of these are complicated, and most come together with a few Trader Joe’s shortcuts, minimal prep, and very little brainpower required.


1. Chicken Shawarma Bowls

Tastes way more impressive than the effort involved.

  • Shawarma chicken thighs
  • Frozen rice
  • Hummus
  • Cucumber
  • TJs garlic dip and spread sauce

2. Salmon Rice Bowls

Tastes like a takeout bowl, but comes together in under 20 minutes.

  • Salmon (fresh or frozen)
  • Frozen jasmine rice
  • Cucumber
  • Avocado
  • Chili onion crunch or gluten-free teriyaki sauce

Bake or pan cook the salmon while the rice heats up. Serve over rice with sliced cucumber and avocado, then drizzle with sauce or spoon over a little chili onion crunch for extra flavor.


3. Frozen Risotto + Scallops (or Chicken)

This feels fancier than it is.

  • Frozen risotto
  • Scallops (or swap for chicken if that’s easier)

Cook both, put them together.

Note: Certain Trader Joe’s frozen risottos (Risotto Semplice (plain) and the Truffle Risotto ) are likely gluten free based on ingredients, but are not certified gluten-free so may have some cross contaminants. Others, such as mushroom herb and asparagus contain wheat. 


4. Pesto Chicken & Crispy Potatoes

Cozy, filling, and surprisingly good for how little work it takes.

  • Pesto chicken
  • Baby potatoes
  • Green beans
  • Parmesan

5. Soup & Grilled Cheese (GF Bread)

Who says comfort food can’t be gluten free.

  • TJs tomato feta soup
  • GF bread
  • Unexpected cheddar
  • Simple salad

6. Ground Turkey + Taco Seasoning + Frozen Peppers

Taco night without the full setup.

  • Ground turkey
  • Taco seasoning
  • Frozen pepper/onion mix

Eat it:

  • In a taco shell
  • Over rice
  • Or just as a bowl

Add avocados, tomatoes or any veggie you prefer.  


7. Orange Chicken Rice Bowls (GF Adapted)

TJs actual Mandarin Orange Chicken isn’t gluten free (sigh).

When you crave the flavor, use:

  • TJ GF nuggets or grilled chicken
  • Orange sauce (San-J gluten free orange sauce from Sprouts is popular, I know I know not TJs sadly) 
  • Jasmine rice
  • Broccoli

8. Sheet Pan Chicken Sausage & Veggies

Minimal cleanup and very hard to mess up.

  • Chicken sausage
  • Peppers
  • Broccoli
  • Red onion
  • Olive oil

9. Snack Plate Dinner

The dinner I make when I mentally clock out.

  • Crackers
  • Cheese
  • Fruit
  • Turkey slices
  • Hummus
  • Nuts

10. Breakfast For Dinner

For the nights when eggs are the only dinner plan I can mentally manage.  A simple, realistic dinner.  

  • Eggs
  • Hash browns
  • Fruit
  • Chicken sausage

None of these dinners are revolutionary, but that’s kind of the point.

They’re simple, flexible meals that help me get dinner on the table without turning it into a whole production. And lately, keeping meals mostly gluten free has helped me feel a lot better too.
